to follow to keep consumers with food allergies safe.
Learners will gain an understanding of the importance of allergen awareness, cross-contamination
prevention, proper labelling, and the legal obligations related to allergen information.

What topics are covered in the Allergen Awareness course?
Our food allergy course covers the following topics:
- Introduction to allergens. This section provides an overview of what allergens are, common
food allergens, the health risks associated with allergen exposure, and the difference
between food allergies and intolerances. - Allergen identification. You will learn how to identify different allergens, including common
ingredients and hidden sources of allergens in food products. - Preventing cross-contamination. This section focuses on strategies to prevent cross-
contamination of allergens during food preparation, cooking, storage and serving. It covers
food hygiene practices, use of separate utensils and equipment, and safe handling
procedures. - Allergen labelling. You will learn about the importance of accurate allergen labelling on
packaged food products, including understanding food labels, recognising allergen warnings,
and interpreting ingredient lists. - Allergen management. This section covers strategies for effectively managing allergens in a
food service establishment, such as implementing allergen control plans, developing
standardised recipes, and training staff on allergen protocols. - Communication and customer service. You will learn how to effectively communicate with customers who have food allergies, including discussing menu options, responding to customer enquiries about allergens and handling special dietary requests.
- Legal requirements. This section provides an overview of the legal obligations and regulations related to allergen information and labelling, including Natasha’s Law. It also covers potential fines and penalties.
- Emergency response. You will be trained to recognise and respond to allergic reactions, including the administration of first aid and the proper use of epinephrine auto-injectors (for example, EpiPen). Please also see our First Aid courses.
- Best practices and continuous improvement. This part of the course emphasises the importance of ongoing training, staying updated on new allergen-related information, and continuously improving allergen management practices.
How long does it take to complete the course?
The Allergen Awareness Course is a 1 Day course where you will learn everything you need to know to complete your exam. This will be held at the end of the and takes approximately 1 hour and consists of 30 multiple choice questions. Once you have successfully completed the course you can download your food allergen certificate.
The certificate does not expire, but it is best practice to refresh your training every 3 years.
